Typical deli meat of the province of Parma, Culatta differs from Culatello in that it is processed with the rind on and not stuffed into a casing. The production phases are similar to those of dry-cured hams. The result is a mild, soft, premium dry-cured meat with an unmistakable and extraordinary fragrance.
