The Abruzzo region has a lot to say about taste and La Felinese acts as its interpreter: Ventricina is the most characteristic cured meat of this region and is obtained from the best cuts of pork such as the shoulders and ham trimmings. The curing mixture consists of salt, chilli pepper, pepper and paprika. Its intense red colour foreshadows the amazing aromas.
