Boccaccio sang its praises in the Decameron, proof that this ancient deli meat has always delighted people with its fragrance, tenderness and aroma. Mortadella is made from finely ground pork meat mixed with diced fat, also called “lardelli”, salt, spices and natural flavours, then stuffed into a casing and slowly dry-cooked in the oven for hours or days depending on the weight.

Modern technology and the selection of raw materials, in this case only Italian meats, today make it possible to produce mortadellas with a significantly reduced content of fats and calories, which makes this deli meat a balanced food from a nutritional point of view.
