It is matured with a special technique that gives it its flattened (“spianata”) shape, hence its name! Typical of the Lazio region, slightly garlicky, it’s characterized by a slow maturation process and an intense aroma of spices.
It has a compact slice with a homogeneous distribution of lardons and an intense and strong taste.
